Cider & Onion Soup Recipe
Make this super tasty Cider & Onion Soup.
A British twist on the classic French Onion soup. It’s worth the stirring and makes enough for 12 meals. Eat some and freeze the rest for ready made meals that are good for your gut.
The recipe itself requires only a few ingredients but it does take a while to cook down the onions to be full of flavour and caramelised enough to give a good depth of flavour. However as this makes 12 meals it saves a lot of future cooking, so to me it’s a winner of a recipe and well worth the stirring 😜
Ingredients:
2kg of chopped white onions
360g unsalted butter
12 x sprigs fresh thyme
3 tbsp sugar
3 tsp sea salt
1200ml chicken stock
1350ml sweet cider
600ml crème fraiche
Small sour dough loaf
Garlic clove
Gruyère cheese
Chop the onions and add to a large stock pot with the butter, thyme, sugar and salt and cook on medium heat for a long time stirring occasionally until caramelised.
Add the stock and cider, simmer for 20 mins.
Take out thyme and remove from heat.
Add crème fraiche and blitz with a stick blender.
Slice sourdough and toast.
Rob with garlic and sprinkle with Gruyère cheese and grill until bubbling and golden.
Ladle soup into a bowl and top with the croutons.
Serve and enjoy with family and friends or keep and freeze in batches as a special treat for lots of tasty heartwarming meals over the winter ♥️
