Simply the Beans

If I read this recipe on a menu I wouldn’t even shortlist it BUT I’m always so surprised how a few simple and fresh ingredients make the tastiest meals. AND it’s vegetarian, so quick to make for a balanced and nourishing meal. 

Simply toast a slice of sourdough and butter if you fancy (I always do 😜)

Fry runner beans and spring onions in olive oil until tender and season to taste

Toast a small handful of walnuts and chop

Once cooked heap the beans on the sourdough, top with walnuts and a creamy cheese of your choice (I added ewes curd to mine) 

Drizzle with balsamic glaze and extra virgin olive oil
